  • 1/4 cup hijiki
  • 1 1/2 cups low-sodium vegetable broth
  • 1/2 cup wild rice, washed and drained
  • 1 Tbs. vegetable oil
  • 3 cups sliced shiitake mushrooms
  • 2 small shallots, finely chopped (1/2 cup)
  • 1 8-oz. pkg. tempeh, cut into 1/2-inch cubes
  • 2 Tbs. tamari or low-sodium soy sauce
  • 2 Tbs. grated fresh ginger
  • 1 tsp. toasted sesame oil
  • 2 Tbs. dried goji berries or dried cranberries
  • 1/2 cup chopped, toasted pecans
  • Chopped fresh parsley, for garnish
