  • 1 medium cucumber, peeled, seeded, and chopped (about 8 ozs)
  • 1/8 tsp salt
  • 1 1/2 cups plain fat-free yogurt
  • 1 Tbsp chopped fresh or 1 tsp dried dill
  • 1 Tbsp dried oregano
  • 1/8 tsp ground red pepper
  • 1/8 tsp black pepper
  • 1 garlic clove, minced
  • 2 lbs boned leg of lamb
  • 2 (16-oz) cans fat-free, less-sodium chicken broth
  • 1/4 tsp salt
  • 1/4 tsp black pepper
