1 cup finely chopped onions

2 bay leaves

2 tablespoons maple syrup (reduced-calorie pancake syrup can be substituted.)

1/4 teaspoon red pepper flakes (add more, if desired)

16 cups collard greens, packed, rinsed,stemmed, and thinly sliced (about 3 bunches of greens)

2 teaspoons red wine vinegar

freshly ground black pepper to taste

salt to taste (optional)
