Juice of both lemons (about 5 Tbs.)

8 shakes Tabasco or other hot sauce; more to taste

2 lb. jumbo shrimp in the shell (24 to 30), thawed completely if frozen and blotted dry

Freshly ground pepper (optional)

1/2 cup salted butter, melted (optional)

Grated zest of 2 small lemons

1/2 tsp. sea salt or kosher salt

2 cups tomato ketchup

1/4 cup vegetable or olive oil

4 heaping Tbs. prepared horseradish; more to taste

2 Tbs. Old Bay seasoning
