1 can full fat coconut milk, chilled (See Notes below recipe for details.)
½ cup coconut sugar (or brown sugar)
1 cup cold coconut milk or coconut milk creamer (carton, not can)
1 tsp pure vanilla extract
1 recipe No Bake Brownie Bites for Ice Cream (See link in Notes below recipe.)
1 recipe Hot Fudge Sauce for Ice Cream (See link in Notes below recipe.)
Make the ice cream by whisking canned coconut milk, coconut sugar, coconut milk and vanilla in a bowl, then pouring the mixture into your ice cream freezer. Freeze according to manufacturer’s directions. (This takes between 20-40 minutes, depending on the type freezer you have.)
While ice cream is freezing, make No Bake Brownie Bites for Ice Cream.
Once ice cream is the consistency of firm soft-serve, spoon out of freezer into large bowl and fold in brownie bites.
Place mixture in your freezer while you prepare Hot Fudge Sauce for Ice Cream.
To serve, scoop ice cream into dessert dishes and top with Hot Fudge Sauce.
