Ingredients for 1 serving

2 cups torn lacinato kale leaves (from about half a bunch)

Coarse salt

1 medium carrot, peeled and coarsely graded

1 hardboiled egg, chopped

2 teaspoons grated Parmesan

2 tablespoons walnuts, coarsely chopped

1/4 ripe avocado, cubed

1 tablespoon cider vinegar

1 teaspoon Dijon mustard

2 1/2 tablespoons olive oil

1/4 teaspoon honey (it’s easier to just drizzle a tad in than actually measure)
