4 sea bass fillets, scaled and pin-boned and cut into half

3 tbsp of vegetable oil

sea salt

freshly ground black pepper

1/4 tsp of turmeric

1/2 tsp of chilli powder

1/4 tsp of chaat masala

1/2 tsp of carom seeds

3/4 tbsp of coriander stalks, chopped

10 okra, trimmed and thinly sliced

1/2 lemon, juiced

4 tbsp of gram flour

vegetable oil

salt

250 g of basmati rice

2 tbsp of vegetable oil

2 tbsp of unsalted butter

1 tsp of black mustard seeds

1 tsp of ginger, finely chopped

1 tsp of green chilli

10 curry leaves, finely shredded

1 banana shallot, finely sliced

4 tbsp of coconut, grated

1 tbsp of fresh coriander, chopped

70 g of red lentils

70 g of yellow lentils

1/2 tbsp of cumin seeds

1/2 tbsp of garlic, finely chopped

1 tsp of green chilli, finely chopped

1/2 tsp of turmeric

1/2 tsp of red chilli powder

2 tbsp of onion, chopped

1 tomato, chopped

1 tbsp of unsalted butter
