Ingredients for 6 servings

1 lb mussels

1 cup chicken broth

1 tsp curry powder

1 tsp garam masala

2  roma tomatoes

1 medium carrots

1 rib  celery

1/2 tsp red pepper

2 tbsps butter

1 can white beans

1/2 tsp saffron

Preparation

1.

Melt butter and add diced carrot and celery. Cook over medium heat until soft.

Add spices including red pepper.

3.

Add chicken broth and bring to boil

4.

Toss in bearded mussels and cover

5.

Wait 4 minutes and start removing mussels that open until all are open. Discard mussels that don't open after 8 mins

6.

Add 1 can white beans to broth and 1 tsp saffron. Pour over mussels and serve
