Ingredients for 4 servings

Knob of butter

8 small shallots, peeled and cut in half

500 g British pork, (you can buy pork “sauté” pieces in most supermarkets) cut into bite-sized pieces

½ teaspoon dried sage

½ 500ml tub low-fat crème fraiche (250mls)

2 teaspoons Maille Dijon mustard

Salt and pepper to taste
