1/4 cup plus 2 tablespoons spelt flour

2 tablespoons oat bran

2 tablespoons dark brown sugar

1 tablespoon sugar

1/8 teaspoon kosher salt

3 tablespoons cold unsalted butter, cut into 1/4-inch pieces

Butter, for the tins

1 cup spelt flour

3/4 cup all-purpose flour

1/4 cup oat bran

1/3 cup dark brown sugar

1/4 cup granulated sugar

1 teaspoon ground allspice

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon kosher salt

1/2 teaspoon ground cinnamon

1 1/2 cups coarsely grated carrots, about 2 medium

2 ounces (1/2 stick) unsalted butter, melted and cooled slightly

1 cup buttermilk (regular or lowfat or nonfat is fine)

1 large egg
