Ingredients for 16 servings

1 cup wheat bran

1 1/2 cups White Whole Wheat flour (Or Whole Wheat pastry flour)

1/4 cup Chopped walnuts

1 tsp baking powder

1 tsp baking soda

1/2 tsp Pink Himalayan sea salt

1/2 cup dark chocolate chips (optional)

1 cup Unsweetened Vanilla almond milk (or your choice of milk)

1/2 cup organic, unrefined liquid sweetener (honey, maple syrup, agave nectar, etc.)

1 tsp organic vanilla extract

3 very ripe bananas, mashed

2 tbsp Unrefined coconut oil, melted

2 Large eggs, Beaten

Preparation

1.

Preheat oven to 400°F. Line a muffin tin with 16 liners

2.

Combine the wheat bran, flour, baking soda, baking powder, and salt. Stir in nuts and chocolate chips (if using)

3.

In a separate bowl, blend mashed bananas, milk, sweetener, coconut oil, vanilla, and eggs. Add to dry ingredients and stir just until moistened

4.

Spoon into paper-lined muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean

5.

Makes 16 muffins
