Ingredients for 6 servings

1-1/2 oz Chicken, boneless and skinless

1 tsp Kosher Salt

2 x garlic cloves, finely minced

1 x shallot, finely chopped

1 tsp mushroom seasoning salt

2 tsp papaya paste

1/2 tsp baking powder

1 tsp Red chili powder

2 tbsp grated palm sugar

2 tsp lemongrass puree

2 tbsp lime juice

4 tbsp canola oil

3 tbsp dark soy sauce

1 cup green onions, sliced into 2" pieces

1/2 tsp black pepper freshly ground

16 tsp package vermicelli rice noodles, cooked and cooled to room temperature

1 x cucumber, seeded and cut into matchsticks

1/2 x head iceberg lettuce, shredded

1 cup carrot and daikon pickles

4 tbsp fresh mint leaves coarsely chopped

3 tbsp roasted peanut, slightly crushed

2 x Jalapeno peppe, optional thinly sliced
