2 tablespoons dark brown sugar

2 large egg yolks

1 teaspoon pure vanilla extract

1 cup coarse sugar such as Turbinado, for rolling

3 ounces white chocolate, chopped

3 tablespoons heavy cream

1/2 teaspoon pure peppermint extract
