Zest and juice of 2 oranges

1 teaspoon. kosher salt

1/4 cup olive oil

1 Portobello mushroom, cubed

1/4 cup chopped onion

1/4 cup chopped celery

1/2 cup chopped bell peppers (green, red, yellow & orange)

1 egg beaten well

1 tube Ritz crackers, finely crushed

1/4 cup frozen orange juice concentrate

Reserved oranges juice

1/4 cup orange marmalade

1 Tbsp cornstarch

1/2 cup water
