2 to 3 Tbs. freshly grated Parmigiano-Reggiano

1 large red onion, sliced crosswise into 1/4-inch disks

4 links sweet or hot Italian sausage (about 1 lb. total)

1 large ripe tomato (about 8 oz.), thinly sliced

1 packed cup arugula, washed (if the leaves are large, stem them)
