Ingredients for 4 servings

4 tsp groundnut oil

2 fennel bulbs

300 ml chicken stock, reduced by about half

half a carrot, peeled

2 tbsp groundnut oil

100 ml chicken stock

1 onion, finely chopped

salt and pepper

2 sprigs thyme

1 x 400g tin cannellini beans, drained and rinsed

50 ml double cream

5 chestnut mushrooms

4 pieces of pork tenderloin

1 clove garlic, crushed

1 bay leaf

75 ml white wine vinegar

200 ml chicken stock

1 tbsp olive oil

To finish:

4 handfuls spinach, wilted

50 g butter

half an onion, peeled

2 tbsp fennel seeds

1 tsp chopped chives

2 tsp wholegrain mustard

1 clove garlic, halved
