Ingredients for 10 servings

1 ham hock

1 rack of pork spare ribs

1 lb slab bacon, chopped

1 lb small red beans

1/2 lb black beans

1/2 lb small white beans

4-6 anchos (dried poblano peppers), stems and seeds removed

1 bottle ale or lager

3 onions, chopped

1 large carrot, chopped

1 large green pepper, chopped

1 14 oz. can whole peeled tomatoes

1 small can tomato paste

1 head garlic, minced

1-2 lbs butternut squash, seeds reserved and chopped to 1 inch cubes

2 scallions, chopped

2 tablespoons fine cornmeal

4 tablespoons brown sugar

couple pinches of oregano and thyme

chili powder to taste

cayenne pepper to taste

cumin to taste

salt and black pepper to taste

vegetable oil
