3/4 cup dry white wine

2 1/2 cups Arborio or Carnaroli rice

1 large onion, minced

1/4 cup heavy cream

Salt and freshly ground black pepper

7 cups simmering beef stock or broth

1 large shallot, minced

3 tablespoons extra virgin olive oil

3/4 cup grated Parmigiano-Reggiano cheese, plus more for garnishing, if desired
