Heat oil to 365 degrees F. in a medium skillet.
2 ripe plantains
1 green plantain, peeled and julienned
Add plantains in batches and cook until golden
8 cups vegetable stock
4 sweet potatoes, roasted, peeled and mashed
1/4 cup pure maple syrup
brown. Remove to a plate lined with paper towels
1 cup coconut milk
Salt and pepper to taste
2 cups canola oil
and season with salt.
