One 14-ounce block firm tofu, drained and cut into 1/2-inch dice

12 ounces soba noodles

1/4 cup vegetable oil, such as canola oil

6 scallions, finely chopped

2 tablespoons finely grated fresh ginger

1 1/2 tablespoons roasted sesame seeds

2 teaspoons kosher salt

1 tablespoon rice vinegar

1 teaspoon toasted-sesame oil

1 bunch watercress (4 ounces), thick stems discarded
