1/2 red onion , thinly sliced

1/2 cup pitted and sliced kalamata olive or other ripe black olives

1 clove garlic , pressed

1 long baguette

salt & fresh ground pepper

1 cup artichoke heart

herbs (eg fresh basil, oregano, thyme...)

2 hard-boiled eggs

1/4 cup capers , rinsed and drained

1/2 cup pesto sauce

4 ounces sliced cheese (no processed slices please! Cut it fresh)

1 red capsicum , thinly sliced
