I've made a vegetarian version of this by making "beef broth" with Frontier Herb's vegetarian beef broth powder (available at Whole Foods and some Grocery stores) - It turned out excellent - I don't remember what the actual beef broth instructions were, but I use 1 TBS powder for each cup of water. It does take a fair amount longer to cook this way as the beef broth powder contains salt and salting beans before they're cooked slows the cooking time.

Ingredients

16 oz dried pinto beans

6 x ancho chiles, stems and seeds removed

6 x cloves of garlic, minced

1 x onion, diced

1 can tomatoes (or 2 medium-sized tomatoes, peeled)(15 oz)

1 tsp Brown Sugar

1 tsp Apple Cider Vinegar

1 tsp paprika

1 tsp Cumin

1/2 tsp Oregano

1 cup Water

6 cup beef broth

Salt and black pepper to taste
