1 pound packaged herbed stuffing mix (such as Pepperidge Farms)

12 ounces pork sausage, casings removed

1 bunch green onions, sliced (including some green tops)

4 celery stalks, thinly sliced

1 cup peeled chestnuts, chopped (about 1/2 pound whole chestnuts)

2 large green apples, cored and diced

1/2 cup unsalted butter

1 1/2 teaspoons dried thyme

2 1/2 cups warmed chicken broth

Salt and freshly ground pepper to taste

Turkey and Gravy

1 fresh turkey (12 to 14 pounds)

1/2 lemon


2 tablespoons all-purpose flour

1/2 cup dry sherry (optional)

1 cup boiling water
