Ingredients for 2 servings

2 tablespoons olive oil (reduced from original)

3 slices Ezekiel bread or french bread, chopped into 1/2-inch croutons

2 1/2 pounds tomatoes, diced (I used grape)

1-2 cloves garlic, minced

2 tablespoons Sucanat or regular sugar

1-2 teaspoons Kosher salt (I used 1 tsp kosher sea salt)

1 teaspoon freshly ground black pepper

1/2 cup thinly slivered basil leaves, lightly packed

1/2 cup 3 minute vegan parmesan cheeze or regular parmesan cheese
