P.S. I didn't find the Gorgonzola dolce, so just used regular Gorgonzola and let it sit out for a while first soft.

Made this fir an Xmas party. Everyone loved it. I added salt when sautéing the onions and a few extra dollops of cheese on top of the egg/cheese mix. I likely used now onion than called for. I will make again for brunch. Mmm!

2/3 cup gorgonzola dolce cheese

1/2 small onion, sliced

1 tablespoon olive oil

1 ripe pear, thinly sliced

2 tablespoons fresh thyme leaves
