Avocado & Tofu:

8 ounces extra-firm tofu

2 avocados, about 6-8 ounces each

Rice vinegar or lemon juice

The Vinaigrette:

1/4 cup rice vinegar

2 tablespoons lemon juice

1 teaspoon Asian fish sauce

1/4 teaspoon finely grated peeled ginger, or to taste

1/4 teaspoon minced garlic

3 tablespoons olive oil

1/2 teaspoon toasted sesame oil

Kosher salt and freshly ground pepper to taste

Pinch of sugar, as needed

Dash of hot sauce (optional)

The Salad:

1 small head butter lettuce

1/4- 1/2 cup slivered almonds, toasted

1 tablespoon chopped herb like chives, or an herb mixture using chives, dill, parsley, basil or cilantro
