2 tablespoons coconut oil

1 tablespoon Thai red chile paste

1 14 oz can organic coconut milk (not light)

1 3-inch piece ginger, peeled and minced

1 medium onion, finely chopped

2 garlic cloves, peeled and chopped

2 teaspoons ground coriander

1/2 teaspoon turmeric

1/4 teaspoon cardamom seeds

2 cups shrimp stock (or vegetable stock, or water)

1 tablespoon fish sauce

3 wild lime leaves

1/2 cup snow peas, sliced in 3

1/2 cup fresh peas

2 cups pea greens

1 cup chopped fresh cilantro
