Peach, Halloumi And Bacon Salad

Ingredients for 1 serving

50 g spinach

1 rashers bacon

1 peach

30 g halloumi cheese

50 g mixed green vegetables

cashews

linseeds

pumpkin seeds

Preparation

1.

Preheat oven to 180 Celsius

2.

Cut peach into quarters, place on baking tray and bake in oven for 20 minutes or until soft

3.

Heat some olive oil in a pan and fry the bacon and halloumi. Halloumi should be golden brown

4.

Arrange the baby spinach in a bowl and sprinkle pumpkin seeds and linseeds

5.

Once bacon and halloumi is cooked put on top of the salad

6.

Cook mixed green veg according to packet and arrange on salad

7.

Finally top with peach, cashews and a dressing if you like. Balsamic / chilli and tomato is great.
