1 Cup vegetable oil

2 Cups whole wheat flour (if you are unfamiliar with wheat flour start with 1 cup wheat flour and 1 cup white flour)

2 Cups brown sugar

2 tsp. baking soda

1 tsp. salt

1 tsp. VIETNAMESE CINNAMON

1 Cup chopped nuts (Pamela uses walnuts)

1 Cup raisins

2 Cups grated carrots

8 oz. cream cheese, regular or lower fat)

1/2 Cup butter (1 stick)

1 Cup confectioner’s sugar

1 tsp. PURE VANILLA EXTRACT
