Ingredients for 6 servings

Olive oil

1 onion, chopped

1 tablespoon chopped garlic

1 teaspoon cumin

1/4 teaspoon cayenne

Salt

Pepper

4 to 6 ounces frozen or defrosted corn kernels (about half a package)

1 pound cooked shredded pork shoulder (2 cups packed)

2 cups cooked beans

1 cup bean cooking liquid or stock

3/4 cup flour

3/4 cup yellow cornmeal

1 teaspoon baking powder

3/4 teaspoon chili powder

3/4 cup buttermilk or milk (I use buttermilk powder)

4 tablespoons (1/2 stick) unsalted butter, melted

1 large egg

1 tablespoon honey

1 cup coarsely grated pepper jack cheese

Sour cream or yogurt and cilantro to serve, optional
