Ingredients for 4 servings

4 1/2 cups mixed vegetables, diced (I used a mix of Brussels sprouts, crimini mushrooms, and bell peppers and 1/2 cup yellow onion)

2 garlic cloves, minced

1 1/2 teaspoons homemade mexican mix (1 teaspoon chili powder + 1/4 teaspoon paprika)

2 teaspoons soy sauce

1 cup cheddar cheese

1 cup brown rice, cooked (optional)

1 14-oz can black beans (double if not using rice)

1 1/2 cups salsa verde

4 whole-wheat tortillas

Salt and pepper to taste
