1 chicken breast, butterflied into two pieces

2 slices prosciutto

2 1/2 Tablespoons flour

1 Tablespoon grated Parmesan cheese

Salt and pepper

1 Tablespoon extra virgin olive oil

2 Tablespoons butter, divided

1/4 cup dry white wine or chicken broth (I used Pinot Grigio)

1 1/2 Tablespoons lemon juice

1 teaspoon lemon zest

2 Tablespoons capers, rinsed in water

chopped parsley
