Good Morning Muffins

Raisins, dried prunes or currants can be used instead of cranberries. Pecans would work well in place of walnuts.

Ingredients for 12 servings

1.5 cups  whole wheat flour

0.5 cup brown sugar

0.25  cup  white sugar

1.5 tsp baking powder

1 tsp baking soda

0.5 tsp salt

1 tsp cinnamon

0.5 tsp ground ginger

0.25 tsp ground cloves

pinch nutmeg

0.5 cup  buttermilk

0.25 cup  sunflower oil

1  egg

1 tsp pure vanilla extract

1 cup carrot, finely grated

0.5 cup tart apple, peeled and coarsely grated

0.33 cup dried cranberries

0.33 cup walnuts, chopped

0.33 cup unsweetened coconut

Preparation

1.

Mix flour, sugars, baking soda, baking powder, salt, spices and set aside.

2.

In a separate (large) bowl, mix buttermilk, oil, egg and vanilla.

3.

Add remaining ingredients to wet mixture, blending well.

4.

Add dry ingredients to wet, being careful not to over mix.

5.

Evenly fill a greased (or lined) standard twelve cup muffin tin with batter.

6.

Bake at 350 Fahrenheit for 20 or so minutes.
