5 dried shiitake mushrooms

10 small dried cloud ear tree fungus (the smaller ones are more tender)

1 piece of firm tofu, 3-by-5-by-2 inches

4 tablespoons vegetable oil

2 cloves garlic, chopped

1 one-inch piece ginger, peeled and chopped

1 carrot, cut into julienne or shredded

1/2 cabbage thinly sliced or shredded

1 celery stalk, sliced on the diagonal or chopped

3/4 cup canned bamboo shoots, drained and sliced thin or julienned

3 tablespoons chicken or vegetable broth

2 teaspoons soy sauce

2 teaspoons cornstarch

2 teaspoons Asian (toasted) sesame oil

12 small flour tortillas or 6 large ones

Hoisin sauce, as desired

4-6 whole green onions, trimmed

1 cup fresh cilantro sprigs
