1/4 cup mayonnaise

1/2-1 teaspoon extra virgin olive oil

A few drops of lemon juice

1 teaspoon chopped shallot or 2 teaspoons thinly sliced green onions

1 teaspoon chopped tarragon

1 teaspoon chopped parsley

1 teaspoon capers in vinegar, drained, or salt cured, soaked and drained

Dab of mild Dijon mustard

A few grains of cayenne pepper
