1/3 pound turnip greens, collards or mustard greens, washed and stemmed

4 salmon fillets (1 inch thick), about 5 ounces each

Salt and pepper

4 tablespoons unsalted butter

Chive oil (see instructions)

1/2 teaspoon coarse sea salt

1 teaspoon snipped chives
