1 cup bamboo shoots, diced

1 cup water chestnuts, diced

1 cup pea shoots, coarsely chopped

1 clove garlic, finely minced

2 tbs. salt

1 tsp. sugar

1 tsp. white pepper

2 tsp. vegetable oil

1 tsp. toasted sesame oil

¼ cup green peas

FOR THE DOUGH:

1⅓ cups wheat starch

⅔ cup tapioca flour

¼ tsp. salt

Vegetable oil

½ cup soy sauce

¼ cup rice vinegar

1 scallion, green parts only, sliced very thin
