1½ cups red lentils

6 cups water

1 bay leaf

1 cinnamon stick

2 tsp. salt

1 tsp. tumeric

1 small head cauliflower, cut into florets

2 large carrots, peeled and sliced into ¼-inch thick rounds

1 cup (about ½ a small head) roughly chopped cabbage

2 medium Yukon gold potaotes, cut into 1-inch chunks

2 tbsp. vegetable oil

1 tsp. brown mustard seeds

1 tsp. cumin seeds

2 tbsp. peeled, minced ginger

3 cloves garlic, minced

1 small onion, finely chopped

1 small jalapeño pepper, seeded and finely diced

Salt and freshly ground black pepper

½ cup cilantro, finely chopped
