1 tablespoon unsalted butter + more as needed

1 tablespoon extra virgin olive oil

1 tablespoon cumin seeds, ground in a spice grinder, or 2 1/2 teaspoons ground cumin

1 medium onion, minced

Kosher salt and freshly ground black pepper

2 pounds russet potatoes, scrubbed

10 cloves garlic confit (optional but recommended, see below)

1 cup milk (whole or 2 percent)

1 cup plain yogurt (greek-style preferred)

1/4 cup carrot juice

1 piece stale bread, ground in a spice grinder or mini food processor (about 1/2 cup)
