4 mallards, breasts only

200 g of honey

3 tsp of Chinese five-spice powder

4 tsp of rapeseed oil

40 ml of sherry vinegar


1 banana shallot, thinly sliced

1 carrot, thinly sliced

1 celery stick, thinly sliced

1 garlic clove, minced

1 sprig fresh rosemary

1 sprig of fresh thyme

1 bay leaf

200 ml of red wine

50 ml of red wine vinegar

100 ml of port

500 ml of brown chicken stock

vegetable oil

1 leek, thinly sliced

100 ml of soy sauce

100 ml of sweet soy sauce

100 ml of cider vinegar

200 ml of water

5 g of agar agar

2 baby gem lettuces

50 g of butter

50 ml of water

1 pinch of salt

1 pinch of pepper

4 duck eggs, yolk only

1 egg, for egg wash

100 g of Panko breadcrumbs

100 g of plain flour

vegetable oil, for deep frying

100 g of fresh broad beans, removed from pod
