Olive oil

1 small onion, diced

2 teaspoons curry powder

½ teaspoon turmeric

1 medium zucchini, coarsely grated or julienned

Sea salt

One 15-ounce can chickpeas, rinsed and drained

One 15-ounce can lentils, rinsed and drained

2 tablespoons Dijon mustard

1 tablespoon lime juice

1/4 cup fresh cilantro leaves

1 cup cooked quinoa
