2 ½ pounds (6 to 7 medium) ripe firm peaches, skinned pitted, red flesh removed and cut into large pieces,

¼ cup granulated sugar

1 tsp cornstarch

1 tbsp fresh lemon juice

pinch salt

1 tsp cinnamon

1 cup unbleached all-purpose flour

3 tbsp plus 1 tsp sugar

¾ tsp baking powder

¼ tsp baking soda

¼ tsp salt

5 tbsp cold unsalted butter, cut into ¼-inch cubes
