1/4 cup sugar

1 tbsp sesame seeds, lightly toasted

2 tbsp finely chopped pickled ginger

3 x scallions, thinly scliced

1/2 cup shredded carrots

1 x English cucumber, seeded and chopped

8 oz extra firm tofu, cut into small cubes

2 sheets nori

1 x avocado

3 tsp wasabi paste

1 tbsp hot water

2 tbsp cold water

2 tbsp soy sauce

2 tbsp ginger juice
