Ingredients

425 ml apple juice or cider

425 g light muscovado sugar

425 g cooking apples, peeled, cored and chopped

1 tsp ground mixed spice

1 tsp ground cinnamon

Pinch ground cloves

425 g currants

425 g raisins

300 g damsons (or plums)

200 g fresh cobnuts roughly chopped (you can use hazelnuts instead)

Grated zest and juice of 1 large orange

250 ml brandy

300 g rice flour

150 g unsalted butter

100 g caster sugar

The finely grated zest of 1 orange (optional)

1 egg, beaten

A splash of milk if needed
