½ cup honey

1 tsp ground cinnamon

½ tsp ground ginger

½ tsp ground cloves

½ cup of finely chopped walnuts

2 Tbsp of spicy brown mustard

¼ cup of balsamic vinegar

½ tsp salt

¼ tsp pepper

8 oz of pork tenderloin

2 cups peeled, diced apple (Granny Smith works well)

3 Tbsp of chopped shallots

For gravy:

1 Tbsp unsalted butter

1 Tbsp flour

1 cup low sodium chicken broth

¼ cup unsweetened applesauce

salt and pepper
