Ingredients for 10 servings

800 g of lean minced lamb

1 onion, finely diced

2 garlic cloves, crushed

1/2 bunch of flat-leaf parsley, chopped

1/4 bunch of mint, leaves chopped

3 tbsp of soy sauce

1 tsp of ground coriander

1 tsp of ground cumin

1/2 tsp of salt

1 tsp of black pepper

2 tbsp of vegetable oil, for frying

420 g of long grain rice

2 knobs of butter

1 onion, finely chopped

2 garlic cloves, minced

2 cinnamon sticks

1 pinch of salt

1/2 tsp of ground ginger

1/2 tsp of white pepper

1/2 tsp of ground cumin

1/2 tsp of ground turmeric

1/2 bunch of coriander, roughly chopped

1 yellow pepper, finely diced

1 carrot, finely diced

80 g of pomegranate seeds

1 l of vegetable stock

200 ml of low fat natural yoghurt

1/2 cucumber, peeled de-seeded and grated

1 tbsp of cumin seeds

1 pinch of salt

1 pinch of pepper
