1 x (3-inch) chunk fresh ginger, sliced

1/4 cup canola oil (or any neutral oil)

1 x chunk rock sugar

1 Package dried thick rice vermicelli noodles

2 tsp mushroom seasoning salt

1 tbsp salt

1 x chunk daikon turnip, peeled

1/2 cup Chinese cabbage, shredded

1 cup Bean Sprouts

6 x sprigs Vietnamese mint

6 x Thai Basil

3 x rau răm

3 x ngò gai

4 x Thai chiles

3 x limes, cut into wedges

3 tbsp cilantro, finely chopped

2 x green onions, thinly sliced

1 x white onion (milder in flavor), thinly sliced

1 tbsp sugar

1 tbsp white vinegar

black pepper

2 x jalapeño peppers, sliced

5 tbsp chili garlic sauce, or Sriracha
