1/2 teaspoon black peppercorns, roughly crushed

1 fresh bay leaf, minced

1 tender lemon leaf, minced (optional)

2 teaspoons brewed, premium light soy sauce

2 teaspoons olive oil

2 teaspoons kirsch

Gastrique

1/2 cup dried and pitted tart Montmorency cherries

2 whole cloves

About 1/2 teaspoon cider vinegar

Pinch of sugar

1/4 cup kirsch
