I let the batter sit overnight which really changed the consistency and worried me in the morning, but these are delicious.

Ingredients for 2 servings

1 cup flour

1 tablespoon baking powder

1/4 teaspoon salt

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

2 tablespoons brown sugar

1/3 cup pumpkin puree

1 egg

1 cup milk

1/2 teaspoon vanilla

2 tablespoons butter, melted and cooled
