1 (3-pound) pork butt or pork shoulder roast, untrimmed (preferably well-marbled)

8 large romaine lettuce leaves, julienned

4 ounces fine rice vermicelli

1 bunch green onions, julienned

1/4 cup Emeril's Original Essence, plus 2 tablespoons, recipe follows

1 1/2 tablespoons chopped cilantro leaves

1 1/2 tablespoons ponzu sauce

1 tablespoon sesame oil or hot sesame oil, or to taste

1 tablespoon dried oregano

6 tablespoons honey

1 1/2 tablespoons Sriracha

Satsuma-Honey Mustard Dipping Sauce, recipe follows

1 tablespoon black pepper

1/2 teaspoon sesame oil

2 tablespoons garlic powder

1/2 cup chopped fresh basil leaves

1/4 cup Satsuma juice or orange juice

1/2 cup chopped fresh cilantro leaves

2 tablespoons salt

12 to 16 (10-inch) rice paper wrappers

1/8 cup olive oil

1 tablespoon dried thyme

1 cup plus 2 tablespoons Satsuma juice or orange juice

1 tablespoon onion powder

3 carrots, peeled and julienned

1 cup chopped fresh mint leaves
